Our History

🇦🇷 The Ritual of Fire – From the Argentine Gauchos

Long before modern steakhouses existed, the ritual of cooking over open fire was born in the vast plains of Argentina.
The gauchos; Argentina’s legendary horsemen, would gather around wood fires in the Pampas, slowly roasting meat over glowing embers under the open sky. With patience and respect for the flame, they developed a method of cooking that allowed the meat to speak for itself. Simple seasoning, natural smoke, and time.
That tradition became the foundation of Argentine asado.

At Aufieri & Martínez, we honor that heritage by cooking over natural charcoal and wood, embracing the same philosophy: fire, patience, and quality.
The result is a distinctive smoky aroma, a beautifully caramelized crust, and a depth of flavor that can only come from live flame.
This is more than grilling.

It is a ritual passed down through generations.
